A decent biryani is typically assessed based on its flavor, the caliber of the meat (or vegetables in the case of a vegetarian biryani), and the combination of rice and spices.

The base of the Kacchi Hyderabadi Biryani is uncooked rice covered with raw meat that has been marinated, and it is cooked over hot coals using the dum technique.

The meat in pakki biryani is pre-cooked or fried.

However, both of these varieties have potent flavors since the rice is prepared with a variety of fiery and acrid spices in addition to saffron, which gives it its characteristic flavor.
