A decent biryani is typically assessed based on its flavor, the caliber of the meat (or vegetables in the case of a vegetarian biryani), and the combination of rice and spices.

With so many variations of the dish, each one is unique due to the manner it is prepared and the special components it contains.

Nawabs created luck by modifying the rich Mughal meal for gentler palates.

Hyderabadi biryani was created when southerners enhanced the meal with more spice and richness.

Lucknowi Biryani

The mildly spiced Lakhnavi or Awadhi biryani should be had with a side of gravy.

The traditional way to consume biryani is on its own, without any gravy or other accompaniments.

However, since Lucknow biryani is merely dry rice with meat, it can be disappointing when eaten on its own.

Many claims that this is because it is intended to be consumed with a gravy called Tari.

Regardless, this particular variety of biryani has a delicate flavor, lots of ghee, cardamom, and very few spices.

Although it can feel dry, the amount of ghee used makes the meat taste even fattier.

Herbs like mint or coriander are not used since Awadhi biryani emphasizes using whole spices.

Hyderabadi Biryani

Hyderabadi biryani is fiery and has a pronounced saffron flavor.

Hyderabadi biryani, which comes in two main varieties: Kachchi and pakki, has a spicy and hot flavor that is indicative of the Andhra influence on Mughlai cuisine.

The base of the Kacchi Hyderabadi Biryani is uncooked rice covered with raw meat that has been marinated, and it is cooked over hot coals using the dum technique.

Steam softens the ingredients as a result of the sealing.

The meat in pakki biryani is pre-cooked or fried.

However, both of these varieties have potent flavors since the rice is prepared with a variety of fiery and acrid spices in addition to saffron, which gives it its characteristic flavor.

The comparison between Lucknowi and Hyderabadi biryani will go on and on, let us enjoy both the classic dishes with Zoop while travelling on the train.
